Our friend Korrin, a Mothering Arts group leader alum, who is the creatress behind Om Mamas Postpartum Kitchen has two cabbage recipes for us this month. I generally do not enjoy coleslaw but I love raw cabbage. On one particular day I decided to play around with the traditional coleslaw recipe and came up with this now family favorite.
1/2 head of cabbage cut thin
1/2 glove garlic made into a paste with a sprinkle of salt and the back of your knife
small piece of ginger, minced (about a tsp)
3 generous tbsp of veganaise
2 tsp of toasted sesame oil
2 tsp maple syrup
1 tbsp of vinegar or lime juice
season to taste
Add all the ingredient to a bowl and mix together. You could add shredded carrot, peppers, cilantro. Cabbage is one of my favorite vegetables and full of vitamin, minerals and antioxidants. it rich in vitamin B6 and folate and is especially rich in vitamin C.
