Another easy and nourishing recipe from our friend Korrin at Om Mamas Kitchen.
This is recipe is simplicity at its best and nourishes my tummy as much as my soul. My great grandmother and grandmother made this dish weekly for as long as I can remember. It is perfect for a busy day and always makes my kiddos happy. I love the idea of my children some day making this for their children with the same warm memories.
4lb of sting beans ends removed
1 1/2 of potato cut in halves
5 cloves of garlic smashed
water
1/4 cup to 1/2 cup olive oil
In a pot cover the string beans and potatoes in water bring to a boil. When potatoes are fork tender drain the water leaving 1/4 of the water in the pot. On the side saute the smashed garlic in the olive till browned. Add the garlic and oil to the potato and string bean mixture. Season with salt and pepper and enjoy with a good loaf of bread.
